In this episode of the “Charlie Kimball: After the Checkered” series, I talked about one of my favorite things to do at home after a long race weekend or during the off-season. As the son of a farmer, I truly appreciate local, quality food. And it’s even better if I get to cook it myself! My wife Kathleen definitely rules the kitchen, but I have a handle on the outdoor grilling space. I typically use a dry rub recipe from Chef JJ’s here in Indy, then smoke the ribs on my Big Green Egg.
